- Step 1Preheat oven to 325F (160C).
- Step 2Beat together butter, icing sugar, and vanilla in a large bowl. Meanwhile, whisk together flour, cornstarch, and salt in a separate bowl.
- Step 3Add half the flour mixture to the butter mixture until just combined. Beat in remaining half.
- Step 4Press into wells of PC Scoop Shop Ice Cream Sandwich Cookie Pan, dividing equally. Bake on middle rack, rotating pan halfway until edges are light golden, 16-17mins. Let cool in pan 10 minutes; remove and cool on rack.
- Step 5Soften ice cream at room temperature; add 2 small scoops to 1 cookie. Top with another cookie and press gently. Smooth edges.
- Step 6Dip in melted chocolate, add your toppings, and freeze until coating is firm, about 5 minutes.
